Ingredients:
- 2 cups mixed vegetables, finely chopped (use a combination of bell peppers, carrots, beans, peas, and cauliflower)
- 2 large tomatoes, finely chopped
- 1 onion, finely chopped
- 2-3 green chilies, finely chopped (adjust to taste)
- 1/2 cup paneer (cottage cheese), cubed
- 2 tablespoons oil or ghee (clarified butter)
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder (adjust to taste)
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon garam masala
- 1/2 teaspoon kasuri methi (dried fenugreek leaves)
- Salt to taste
- Fresh coriander leaves for garnish

Instructions:
Preparing the Vegetables:
- Wash, peel (if needed), and finely chop the mixed vegetables. Keep them aside.
Making Veg Takatak:
- Heat oil or ghee in a large, heavy-bottomed pan or kadai over medium-high heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add finely chopped onions and green chilies. Sauté until the onions turn translucent.
- Add the mixed vegetables and stir-fry them on high heat for about 4-5 minutes. You want them to retain their crunch.
- Reduce the heat to medium and add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the vegetables evenly with the spices.
- Add the chopped tomatoes and cook until they become soft and mushy, stirring occasionally. This should take about 5-6 minutes.
- Now, add the paneer cubes and garam masala. Gently mix them in.
- Crush the dried kasuri methi between your palms and sprinkle it over the vegetables. This adds a unique flavor to the dish.
- Continue to cook for another 2-3 minutes, allowing the flavors to meld together.
- Taste and adjust the spice level and salt as needed.
Serving Veg Takatak:
- Transfer the Veg Takatak to a serving platter.
- Garnish with freshly chopped coriander leaves.
- Serve hot, sizzling directly from the pan if you have an iron skillet, with naan, roti, or paratha.
