Ingredients:

  • 2 cups mixed vegetables, finely chopped (use a combination of bell peppers, carrots, beans, peas, and cauliflower)
  • 2 large tomatoes, finely chopped
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1/2 cup paneer (cottage cheese), cubed
  • 2 tablespoons oil or ghee (clarified butter)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

Preparing the Vegetables:

  1. Wash, peel (if needed), and finely chop the mixed vegetables. Keep them aside.

Making Veg Takatak:

  1. Heat oil or ghee in a large, heavy-bottomed pan or kadai over medium-high heat.
  2. Add cumin seeds and mustard seeds. Let them splutter.
  3. Add finely chopped onions and green chilies. Sauté until the onions turn translucent.
  4. Add the mixed vegetables and stir-fry them on high heat for about 4-5 minutes. You want them to retain their crunch.
  5. Reduce the heat to medium and add turmeric powder, red chili powder, coriander powder, cumin powder, and salt. Mix well to coat the vegetables evenly with the spices.
  6. Add the chopped tomatoes and cook until they become soft and mushy, stirring occasionally. This should take about 5-6 minutes.
  7. Now, add the paneer cubes and garam masala. Gently mix them in.
  8. Crush the dried kasuri methi between your palms and sprinkle it over the vegetables. This adds a unique flavor to the dish.
  9. Continue to cook for another 2-3 minutes, allowing the flavors to meld together.
  10. Taste and adjust the spice level and salt as needed.

Serving Veg Takatak:

  1. Transfer the Veg Takatak to a serving platter.
  2. Garnish with freshly chopped coriander leaves.
  3. Serve hot, sizzling directly from the pan if you have an iron skillet, with naan, roti, or paratha.
