- 1 cup basmati rice or any long-grain rice
- 2 large tomatoes, finely chopped

- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon turmeric powder

- 1 teaspoon coriander powder
- 1/2 teaspoon garam masala
- 1/4 teaspoon asafoetida (hing)
- A few curry leaves
- 2 tablespoons oil or ghee
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
Cooking the Rice:
- Wash the rice thoroughly and soak it in water for about 20-30 minutes. Drain the water.
- In a large pot, bring 2 cups of water to a boil. Add the drained rice.
- Cook the rice until it’s 90% cooked, meaning it’s slightly undercooked. You want the grains to be separate. This should take about 8-10 minutes.
- Drain the rice in a colander and let it cool completely. You can also spread it on a plate to speed up the cooling process. Ensure the rice grains are not sticky.
Preparing the Tomato Rice:
- Heat oil or ghee in a pan or kadai over medium heat.
- Add mustard seeds and cumin seeds. Let them splutter.
- Add asafoetida (hing), grated ginger, and minced garlic (if using). Sauté for a minute until fragrant.
- Add finely chopped onions and green chilies. Sauté until the onions turn translucent.
- Add the finely chopped tomatoes. Cook them until they turn soft and start to break down.
- Add turmeric powder, red chili powder, coriander powder, and salt. Mix well and cook for a few more minutes until the tomatoes are fully cooked and the oil begins to separate from the mixture.
- Add garam masala and curry leaves. Mix to incorporate the spices.
- Gently fold in the cooked rice. Be careful not to break the rice grains. Ensure the rice is well coated with the tomato mixture.
- Taste and adjust the seasoning or spices as needed.
- Cover the pan and let it simmer on low heat for 5-7 minutes. This allows the flavors to meld, and the rice will finish cooking.
Serving Tomato Rice:
- Garnish with freshly chopped coriander leaves.
