Ingredients:

  • 1 cup semolina (rava or sooji)
  • 1/2 cup ghee (clarified butter)

  • A pinch of saffron strands (optional)
  • 1/4 cup warm milk (if using saffron)
  • 1/4 teaspoon cardamom powder
  • A handful of cashews and raisins for garnish
  • Orange zest from one orange (for garnish)
  • A few drops of orange essence or orange extract (optional)
  • A pinch of salt
  • Water, as needed

Instructions:

  1. Prepare the Saffron Milk (if using):
    • If you’re using saffron, soak a pinch of saffron strands in 1/4 cup of warm milk. Set it aside to infuse its flavor and color.
  2. Roast the Semolina:
    • Heat a heavy-bottomed pan or kadai over medium-low heat.
    • Add the semolina and dry roast it while continuously stirring. Roast until it turns fragrant and starts to change color. This step is essential to remove any raw taste from the semolina. It should become a light golden brown. This process can take about 7-10 minutes.
  3. Prepare the Orange Juice:
    • While roasting the semolina, extract fresh orange juice and strain it to remove any seeds or pulp.
  4. Cook the Sheera:
    • Once the semolina is roasted, add ghee to it and mix well. Allow the ghee to melt completely.
    • Carefully pour in the fresh orange juice and mix continuously to avoid lumps.
    • If you’re using saffron milk, add it at this stage and mix.
    • Cook the mixture on low heat for a few minutes while stirring continuously.
    • Gradually add sugar and continue to stir. The mixture will start to thicken as the sugar dissolves.
    • Add a pinch of salt and cardamom powder for flavor.
    • If you’re using orange essence or extract for extra flavor, add it now.
    • Continue to cook, stirring frequently, until the mixture leaves the sides of the pan and starts to come together. It should have a smooth and glossy texture.
  5. Garnish:
    • In a separate small pan, heat a tablespoon of ghee. Add cashews and raisins and fry them until the cashews turn golden brown.
    • Pour this mixture over the prepared sheera and give it a gentle stir.
  6. Serve:
    • Garnish the Orange Sheera with fresh orange zest for a burst of color and citrusy aroma.
    • Serve it hot or warm. It can be enjoyed as a dessert or a sweet snack.
