Ingredients:

  • 1 large banana blossom (about 500-600 grams)
  • 1 large potato, cut into small cubes
  • 1 cup grated coconut

  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1-2 bay leaves
  • 2-3 dry red chilies
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1-2 teaspoons sugar (optional)
  • Salt to taste
  • Mustard oil for cooking
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Banana Blossom:

  1. Peel the outer layers of the banana blossom until you reach the tender, light-colored inner layers.
  2. Finely chop the tender part of the blossom, discarding the tough outer layers and the central stem. As you chop, soak the pieces in water mixed with a little salt to prevent discoloration.
  3. Once chopped, rinse the banana blossom thoroughly in fresh water and drain.

2. Cooking the Banana Blossom and Potatoes:

  1. Heat water in a pan and add the chopped banana blossom. Boil for about 10-12 minutes or until the banana blossom becomes tender. Drain and set aside.
  2. In a separate pan, heat mustard oil until it starts to smoke. Allow it to cool slightly.
  3. Reduce the heat to low and add mustard seeds, cumin seeds, bay leaves, and dry red chilies. Sauté until the spices release their aroma.
  4. Add the cubed potatoes and sauté for a few minutes until they start to turn golden brown.
  5. Stir in the boiled banana blossom, turmeric powder, cumin powder, coriander powder, red chili powder, green chilies, and salt. Mix well to combine.
  6. Cook the mixture on low heat for about 10-15 minutes, stirring occasionally, until the flavors meld and the spices coat the vegetables.

3. Adding Coconut and Seasoning:

  1. Add the grated coconut and mix well with the vegetables.
  2. If desired, add sugar and mix until it dissolves.
  3. Cook for another 2-3 minutes, allowing the flavors to combine.

4. Garnishing and Serving:

  1. Garnish with freshly chopped coriander leaves.
  2. Serve Mochar Ghanto hot with steamed rice or any Indian bread of your choice.

  • Adjust the spice level by varying the amount of green chilies and red chili powder.
  • It’s essential to soak the banana blossom in salted water to prevent discoloration.
