Ingredients:

  • 250 grams fresh okra (bhindi)
  • 2 tablespoons besan (gram flour)
  • 2 tablespoons rice flour (optional, for extra crispiness)
  • 1 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon amchur (dry mango) powder
  • Salt to taste
  • 2 tablespoons oil, plus more for frying
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • Fresh coriander leaves for garnish (optional)
  • Lemon wedges for serving (optional)

Instructions:

Preparing the Okra:

  1. In a mixing bowl, combine the sliced okra, besan (gram flour), rice flour (if using), red chili powder, turmeric powder, coriander powder, cumin powder, amchur (dry mango) powder, and salt. Toss the okra slices well to coat them evenly with the spice mixture.
  2. Heat 2 tablespoons of oil in a pan or skillet over medium heat. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add a pinch of asafoetida (hing) and mix it in.
  4. Carefully add the coated okra slices to the hot oil. Spread them out in a single layer in the pan.
  5. Reduce the heat to medium-low and let the okra cook undisturbed for a few minutes. This allows them to get crispy on one side.
  6. After a few minutes, stir the okra gently to ensure even cooking. Continue cooking on medium-low heat, stirring occasionally.
  7. Cook until the okra becomes crispy and golden brown. This process may take around 15-20 minutes. Be patient, as slow cooking is essential to achieve that perfect crispiness.
  8. Once the okra is crispy and the spices are well-roasted, remove them from the heat.
