Ingredients:

  • 250 grams small eggplants (baingan), slit lengthwise but left whole

  • 1/2 cup desiccated coconut
  • 2-3 tablespoons oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2-3 green chilies, slit lengthwise
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon garam masala
  • A pinch of asafoetida (hing)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing the Masala Paste:

  1. In a pan, dry roast peanuts, sesame seeds, and desiccated coconut separately until they turn golden brown. Let them cool.
  2. Grind the roasted peanuts, sesame seeds, and coconut into a smooth paste using a little water. Set aside.

2. Preparing the Eggplants:

  1. Wash the eggplants and slit them lengthwise, leaving them whole.
  2. Heat a little oil in a pan and shallow fry the eggplants until they are lightly browned. Set them aside.

3. Making the Gravy:

  1. In the same pan, heat 1-2 tablespoons of oil. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn golden brown.
  3. Add the prepared masala paste, turmeric powder, red chili powder, garam masala, and salt. Mix well.
  4. Cook the masala on low heat until it releases oil and becomes aromatic.
  5. Add the shallow-fried eggplants and mix gently, ensuring the masala coats the eggplants well.
  6. Add a little water, cover, and let it simmer for 10-15 minutes or until the eggplants are tender and cooked through.

4. Serving:

  1. Garnish with fresh coriander leaves.
  2. Serve Baghare Baingan hot with naan, rice, or any Indian bread of your choice.

Tips:

  • You can adjust the spice levels by varying the amount of red chili powder and green chilies.
  • Be gentle when mixing the eggplants with the masala to avoid breaking them.
