Instructions:
1. Preparing the Masala Paste:
- In a pan, dry roast peanuts, sesame seeds, and desiccated coconut separately until they turn golden brown. Let them cool.
- Grind the roasted peanuts, sesame seeds, and coconut into a smooth paste using a little water. Set aside.
2. Preparing the Eggplants:
- Wash the eggplants and slit them lengthwise, leaving them whole.
- Heat a little oil in a pan and shallow fry the eggplants until they are lightly browned. Set them aside.
3. Making the Gravy:
- In the same pan, heat 1-2 tablespoons of oil. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add the prepared masala paste, turmeric powder, red chili powder, garam masala, and salt. Mix well.
- Cook the masala on low heat until it releases oil and becomes aromatic.
- Add the shallow-fried eggplants and mix gently, ensuring the masala coats the eggplants well.
- Add a little water, cover, and let it simmer for 10-15 minutes or until the eggplants are tender and cooked through.
4. Serving:
- Garnish with fresh coriander leaves.
