Ingredients:

- 2-3 dry red chilies
- A few curry leaves
Instructions:
1. Preparing the Vegetables:
- Wash and cut the mixed vegetables into uniform 2-inch pieces. If using drumsticks, cut them into similar lengths.
- Cook the vegetables in a little water with turmeric powder and salt until they are just tender but still retain their shape. Drain and set aside.
2. Preparing the Coconut Paste:
- Grind the grated coconut, green chilies, and grated ginger into a smooth paste using a little water.
- Mix the coconut paste with yogurt to form a smooth mixture. Set aside.
3. Cooking the Avial:
- In a deep pan, combine the cooked vegetables and the coconut-yogurt mixture. Mix gently.
- Heat the mixture over medium heat, stirring gently, until it’s heated through. Be careful not to bring it to a boil.
4. Tempering:
- In a separate small pan, heat coconut oil over medium heat.
- Add mustard seeds and allow them to splutter.
- Add dry red chilies and curry leaves. Sauté for a few seconds until aromatic.
- Pour this tempering over the avial and mix gently.
5. Serving:
- Serve hot Avial with steamed rice or as an accompaniment to dosa, idli, or adai.
