Ingredients:

- 2-3 green chilies, slit lengthwise

- 1/2 cup plain yogurt
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Cooking the Rice:
- In a large pot, bring water to a boil. Add the soaked and drained basmati rice.
- Add bay leaves, cloves, cardamom pods, cinnamon stick, and salt.
- Cook the rice until it’s 70-80% cooked. Drain the water and set the rice aside.
2. Preparing the Vegetable Mix:
- Heat oil or ghee in a large, heavy-bottomed pan.
- Add sliced onions and sauté until golden brown.
- Stir in the ginger-garlic paste and green chilies. Sauté for a minute.
- Add the mixed vegetables and cook for a few minutes.
- Mix in red chili powder, turmeric powder, garam masala, and salt.
- Add plain yogurt and cook until the vegetables are tender.
3. Assembling and Cooking:
- Preheat the oven to 180°C (350°F).
- In an ovenproof dish, layer half of the partially cooked rice.
- Add a layer of the cooked vegetable mix over the rice.
- Layer the remaining rice on top of the vegetables.
- Garnish with fresh coriander leaves.
- Cover the dish with a tight-fitting lid or aluminum foil.
- Bake in the preheated oven for about 20-25 minutes or until the rice is fully cooked.
4. Serving:
- Gently fluff the Vegetable Biryani with a fork.
- Serve hot, garnished with additional coriander leaves, and accompanied by raita, salad, or pickle.
