- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon turmeric powder
- 1 teaspoon coriander powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Making Gatte (Gram Flour Dumplings):
- In a mixing bowl, combine gram flour, carom seeds, cumin seeds, red chili powder, turmeric powder, garam masala, and salt.
- Gradually add water to make a firm, smooth dough. Knead the dough for a few minutes.
- Divide the dough into small portions and shape them into cylindrical rolls (gatte).
- Heat water in a pan and gently add the gatte. Boil until they float to the surface, indicating they are cooked. Remove and let them cool.
- Once cooled, slice the gatte into small round pieces.
2. Preparing the Gravy:
- In a bowl, mix beaten yogurt with gram flour to make a smooth mixture.
- Heat oil or ghee in a pan. Add cumin seeds and mustard seeds. Let them splutter.
- Add asafoetida, green chilies, and ginger-garlic paste. Sauté for a minute.
- Stir in turmeric powder, coriander powder, red chili powder, garam masala, and salt. Mix well.
- Reduce the heat and add the yogurt-gram flour mixture. Cook, stirring continuously, until the gravy thickens and the oil separates.
3. Adding Gatte:
- Add the sliced gatte to the gravy. Mix gently to coat the gatte with the gravy.
- Let the curry simmer for a few minutes to allow the flavors to meld.
4. Serving:
- Garnish with fresh coriander leaves.
- Serve Gatte Ki Sabzi hot with roti or steamed rice.
Tips:
- Make sure the gatte are well-cooked before slicing them.
- Adjust the spice levels by varying the amount of red chili powder and green chilies.
