Vegetable Cutlets are tasty and versatile snacks made from a medley of vegetables, potatoes, and spices. They’re often enjoyed with chutney or as a filling in sandwiches. Here’s how to make Vegetable Cutlets:

Ingredients:

  • 3-4 large potatoes, boiled and mashed
  • 1 cup mixed vegetables (carrots, beans, peas), finely chopped and steamed
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped
  • 1/2 cup bread crumbs
  • 1/2 cup coriander leaves, chopped
  • 1/2 teaspoon ginger-garlic paste
  • 1 teaspoon garam masala
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for shallow frying
  • Bread crumbs for coating

Instructions:

1. Preparing the Vegetable Mixture:

  1. In a large mixing bowl, combine mashed potatoes, steamed mixed vegetables, chopped onions, green chilies, ginger-garlic paste, coriander leaves, garam masala, cumin seeds, turmeric powder, red chili powder, and salt.
  2. Mix well to form a uniform mixture.
  3. Add bread crumbs gradually while mixing, ensuring the mixture is firm enough to shape into cutlets.

2. Shaping the Cutlets:

  1. Divide the mixture into equal portions and shape each portion into round or oval patties (cutlets).
  2. If the mixture is too sticky, you can grease your hands with a little oil while shaping the cutlets.
  3. Cover the cutlet with bread crumbs.

3. Shallow Frying:

  1. Heat oil in a pan over medium heat for shallow frying.
  2. Place the coated cutlets in the hot oil and fry until they’re golden brown and crispy on both sides.
  3. Remove the cutlets from the oil and place them on paper towels to remove excess oil.

4. Serving:

  1. Serve the Vegetable Cutlets hot with mint chutney, tomato ketchup, or as a sandwich filling.
  2. Enjoy these crispy and flavourful cutlets!

Tips:

  • Customize the vegetables to your preference. You can also add sweet corn, capsicum, or spinach.
  • If you’re averse to frying, you can also bake the cutlets in a preheated oven at 200°C (392°F) for 20-25 minutes or until golden and crispy.

Vegetable Cutlets are a delicious and versatile snack, perfect for tea-time or parties. The combination of various vegetables and spices makes them a flavorful treat loved by all ages.
