- In a separate pan, heat the ghee or oil over medium heat. Add the cumin seeds, mustard seeds, and dried red chillies. Let them sizzle for a few seconds until fragrant.
- Add the chopped onion, minced garlic, and grated ginger to the pan. Sauté until the onion is translucent.
- Add the curry leaves and sauté for another minute.
- Once the dal is cooked, add the sautéed mixture to the dal and stir well. Season with salt to taste.

- Simmer the dal for a few more minutes to allow the flavors to meld together.
