  5. Allow the batter to ferment for 2-3 hours, or overnight, to enhance the flavor.

2. Frying the Unniyappam:

  1. Heat the unniyappam pan or a traditional “appam” pan over medium heat.
  2. Add a little ghee in each mold of the pan.
  3. Once the pan is hot, pour the batter into each mold, filling them about 3/4 full.
  4. Cook on medium-low heat. When the edges start to brown and the center appears cooked, flip each unniyappam using a fork or a skewer.
  5. Add more ghee around the edges if needed.
  6. Cook until both sides are golden brown and crispy.
  7. Remove the cooked unniyappam from the pan and drain excess ghee by placing them on a paper towel.

3. Serving:

  1. Serve Unniyappam warm.
