Unniyappam Recipe: A Traditional Kerala Delicacy
Unniyappam is a popular Kerala snack, typically made during festivals like Onam and Vishu. It’s a sweet, deep-fried dumpling made from rice flour, jaggery, banana, and spices. Here’s how to make Unniyappam:
Ingredients:
- 1 cup rice flour
- 1/2 cup ripe banana, mashed
- 1/2 cup grated jaggery
- 1/4 cup grated coconut
- 1/4 teaspoon cardamom powder
- A pinch of baking soda
- Ghee or clarified butter for frying
- A pinch of salt
- Water, as needed
Instructions:
1. Preparing the Batter:
- In a mixing bowl, combine rice flour and mashed banana. Mix well to form a thick paste-like consistency.
- Add grated jaggery and grated coconut. Mix thoroughly until well combined.
- Stir in cardamom powder, a pinch of salt, and a pinch of baking soda. Mix well.
- Gradually add water and mix to form a smooth batter. The batter should have a pouring consistency but not too runny.
- Allow the batter to ferment for 2-3 hours, or overnight, to enhance the flavor.
2. Frying the Unniyappam:
- Heat the unniyappam pan or a traditional “appam” pan over medium heat.
- Add a little ghee in each mold of the pan.
- Once the pan is hot, pour the batter into each mold, filling them about 3/4 full.
- Cook on medium-low heat. When the edges start to brown and the center appears cooked, flip each unniyappam using a fork or a skewer.
- Add more ghee around the edges if needed.
- Cook until both sides are golden brown and crispy.
- Remove the cooked unniyappam from the pan and drain excess ghee by placing them on a paper towel.
3. Serving:
- Serve Unniyappam warm.
- Enjoy this sweet, fluffy, and flavorful Kerala snack!
Tips:
- Ensure the banana is ripe and mashed well for a smoother batter.
- Adjust the sweetness by varying the amount of jaggery according to your taste.
- Make sure the pan is at the right temperature to achieve the perfect golden-brown color and crispiness.
Unniyappam is a delightful sweet snack that’s a favourite during festivals and special occasions. The combination of rice flour, banana, and jaggery creates a unique and delicious treat!
