Ukadichha Modak Recipe: Traditional Steamed Rice Flour Dumplings

Ingredients:

- 1 cup rice flour
- 1 1/2 cups water

- 1/2 cup grated jaggery
- 1/2 teaspoon cardamom powder
- A few saffron strands soaked in warm milk (optional)

Instructions:
1. Preparing the Filling:
- Heat a pan on medium heat and add grated coconut and grated jaggery.
- Stir continuously until the mixture thickens and the jaggery melts and combines with the coconut.
- Add cardamom powder, saffron milk, and chopped nuts. Mix well and cook until the mixture forms a cohesive filling. Set aside to cool.
2. Preparing the Outer Covering:
- In a heavy-bottomed pan, bring water to a boil.
- Add a pinch of salt and a teaspoon of ghee.
- Gradually add rice flour while continuously stirring to avoid lumps.
- Reduce the heat to low and continue stirring until the mixture forms a dough-like consistency.
- Cover and let the dough cool for a few minutes until it’s warm enough to handle.
- Knead the dough well to make it smooth and pliable.
3. Shaping the Modak:
- Take a small portion of the dough and flatten it to form a small disc using your fingers.
- Place a portion of the coconut-jaggery filling in the center of the disc.
- Gently start pinching the edges of the disc, making pleats and bringing them together at the top to form a peak.
4. Steaming the Modak:
- Grease a steamer plate with a little ghee.
- Arrange the modaks on the plate and steam them on medium heat for 10-12 minutes.
5. Serving:
- Remove the steamed modaks and let them cool slightly.
- Serve Ukadichha Modak as an offering to Lord Ganesha or as a delightful sweet treat.
Tips:
- You can shape the modaks using a modak mold for a more defined shape.
- Ensure the dough is warm while shaping the modaks to prevent cracking.
