Traditional Kutchi Dabeli Recipe – Spicy Potato-stuffed Burgers from Gujarat, India

Kutchi Dabeli is a popular street food from the Kutch region of Gujarat, India. This spicy and tangy snack is a flavourful combination of crispy pav buns filled with a mixture of mashed potatoes, peas, onions, and a blend of spices. It’s a must-try for anyone who loves Indian street food!

Ingredients:

  • 4-6 pav buns
  • 2 large potatoes, boiled, peeled, and mashed
  • 1 cup fresh peas
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt, to taste
  • 2 tablespoons tamarind chutney
  • 2 tablespoons date and tamarind chutney (optional)
  • Chopped fresh coriander, for garnish
  • Sev or fried gram flour noodles, for garnish (optional)

Method:

  1. Heat oil in a pan over medium heat. Add cumin seeds and coriander seeds, and let them sizzle for a few seconds.
  2. Add chopped onion and sauté until translucent. Add minced garlic and sauté for another minute.
  3. Add mashed potatoes, peas, turmeric powder, red chilli powder, and salt. Mix well.
  4. Cook for 5-7 minutes or until the mixture is dry and crumbly.
  5. Slit the pav buns in half and toast them lightly.
  6. Assemble the dabeli by spreading a layer of tamarind chutney on each pav bun, followed by a spoonful of the potato-peas mixture.
  7. Garnish with chopped coriander, sev or fried gram flour noodles (if using), and serve immediately.
