Surti Style Tomato Fritters Recipe

Surti Tameta nu Bhajiya is a popular Gujarati snack from the city of Surat in Gujarat, India. This crispy fried fritter is made with a mixture of tomatoes, onions, and spices, coated in a gram flour batter, and then deep-fried to perfection. It’s a staple street food in Surat and is often served with a hot cup of chai or as a side dish with other Gujarati delicacies.

Ingredients:

  • 2 large tomatoes, finely chopped
  • 1 large onion, finely chopped
  • 1/2 cup gram flour (chickpea flour)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder
  • Salt, to taste
  • 1/4 cup lemon juice
  • 1/4 cup water
  • Vegetable oil, for frying
  • Chopped fresh coriander, for garnish

Method:

  1. In a large bowl, combine the chopped tomatoes, onions, turmeric powder, red chilli powder, garam masala powder, and salt. Mix well.
  2. In a separate bowl, mix together the gram flour, lemon juice, and water to form a smooth batter.
  3. Add the tomato-onion mixture to the gram flour batter and mix well.
  4. Heat enough vegetable oil in a deep frying pan over medium heat.
  5. Using a spoon, drop small portions of the mixture into the hot oil and fry until golden brown and crispy.
  6. Drain the bhajiyas on paper towels and serve hot with a sprinkle of chopped coriander.
