Ingredients:

  • 2 tablespoons vegetable oil
  • 1 small onion, finely chopped (about ½ cup)
  • 1 medium red bell pepper, finely chopped (about ½ cup)
  • 1 medium green bell pepper, finely chopped (about ½ cup)
  • 1 cup chopped mixed vegetables (carrot, peas, corn, cauliflower)
  • ½ cup chopped mushrooms (optional)
  • 1 green chili, finely chopped (optional)
  • 1 inch ginger, grated
  • 2 cloves garlic, minced
  • 2 cups basmati rice
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili powder (adjust to your spice preference)
  • ½ teaspoon garam masala
  • Salt and Pepper to taste
  • 2 tablespoons soy sauce
  • 1 tablespoon Schezwan sauce (optional) 
  • 1 tablespoon Tomato sauce or Red chilli Sauce (optional / or a mix of both)
  • 1 tablespoon chopped coriander leaves (cilantro)
  • Few drops of Lemon juice

Method:

  1. Soak the rice in water for 10-15 minutes and drain. Boil water, add rice and a little salt and lime juice. Cook uncovered on low heat till rice is tender. Take care not to overcook the rice. Each grain of rice should be separate. When rice is done, drain the water and spread the rice on a plate.
  2. Heat oil in a wok or large pan over medium-high heat. Add onion and cook until softened and translucent, about 1-2 minutes. Add the soya sauce, schezwan sauce and tomato sauce.
  3. Add bell peppers and mixed vegetables, cook for another 2-3 minutes, or until slightly softened.
  4. Add mushrooms and green chili (if using), cook for an additional minute.
  5. Push the vegetables to the side of the pan and add the ginger and garlic. Cook for 30 seconds, stirring constantly, until fragrant.
  6. Add the cooked rice and break up any clumps with a spatula. Season with turmeric powder, red chili powder, garam masala, and salt and pepper
  7. Stir-fry for 3-4 minutes, mixing everything well and ensuring the rice is heated through and mix gently
  8. Garnish with chopped coriander leaves and serve hot.
