1. Preparing the Dough:
- In a mixing bowl, combine rice flour, besan, chopped fresh coriander leaves, green chilies, cumin seeds, and salt.
- Gradually add water and knead the mixture into a smooth, pliable dough. The dough should be firm enough to shape into dumplings.
2. Shaping the Shengole:
- Take a small portion of the dough and roll it between your palms to form a smooth ball.
- Gently press the ball between your palms to flatten it slightly, giving it a disc-like shape.
- Use your fingers to create a slight depression in the center of the disc. This is to ensure even cooking during steaming.
- Repeat this process with the remaining dough to make more shengole.
3. Steaming the Shengole:
- Place the shaped shengole on a greased steamer plate or idli stand.
- Steam the shengole for about 15-20 minutes or until they are cooked through. They will become slightly translucent when done.

- Heat oil in a pan. Add mustard seeds and let them splutter.
