Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine rice flour, besan, chopped fresh coriander leaves, green chilies, cumin seeds, and salt.
  2. Gradually add water and knead the mixture into a smooth, pliable dough. The dough should be firm enough to shape into dumplings.

2. Shaping the Shengole:

  1. Take a small portion of the dough and roll it between your palms to form a smooth ball.
  2. Gently press the ball between your palms to flatten it slightly, giving it a disc-like shape.
  3. Use your fingers to create a slight depression in the center of the disc. This is to ensure even cooking during steaming.
  4. Repeat this process with the remaining dough to make more shengole.

3. Steaming the Shengole:

  1. Place the shaped shengole on a greased steamer plate or idli stand.
  2. Steam the shengole for about 15-20 minutes or until they are cooked through. They will become slightly translucent when done.

4. Preparing the Tempering:

  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add cumin seeds, asafoetida, and curry leaves. Sauté for a minute.
  3. Add grated coconut and sauté until it becomes lightly golden.

5. Serving:

  1. Pour the prepared tempering over the steamed shengole.
  2. Garnish with fresh coriander leaves.
  3. Serve Shengole hot with lemon wedges (if desired).

Tips:

  • Adjust the spice level by varying the amount of green chilies.
  • You can also add grated ginger for extra flavor.
