Ingredients:

For the Kachori Dough:

  • 2 cups all-purpose flour (maida)
  • 1/4 cup semolina (sooji)
  • 1/4 cup ghee (clarified butter), melted
  • Salt to taste
  • Water, as needed

For the Lentil Filling:

  • 1 cup yellow moong dal (split yellow lentils)
  • 2-3 green chilies, finely chopped
  • 1-inch ginger, grated
  • 1 teaspoon fennel seeds (saunf)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/4 teaspoon asafoetida (hing)
  • Salt to taste
  • Oil, for frying

Instructions:

1. Preparing the Lentil Filling:

  1. Wash and soak the moong dal in water for about 4-5 hours.
  2. Drain the soaked dal and grind it coarsely in a food processor or grinder without adding water.
  3. Heat a little oil in a pan. Add cumin seeds, fennel seeds, grated ginger, and chopped green chilies.
  4. Add the coarsely ground dal, red chili powder, turmeric powder, garam masala, asafoetida, and salt. Mix well and cook until the mixture dries out and is cooked through. Allow the mixture to cool.

2. Making the Kachori Dough:

  1. In a mixing bowl, combine all-purpose flour, semolina, melted ghee, and salt.
  2. Gradually add water and knead to make a soft, pliable dough. Cover and let it rest for 15-20 minutes.

3. Assembling and Frying the Kachori:

  1. Divide the dough into equal-sized balls. Roll each ball into a small disc.
  2. Place a spoonful of the lentil filling in the center of each disc.
  3. Carefully gather the edges of the dough and seal the filling inside, shaping it into a ball.
  4. Gently flatten the filled dough balls into discs.
  5. Heat oil in a deep pan or kadai over medium heat for deep frying.
  6. Carefully slide the kachoris into the hot oil and fry until they turn golden brown and crispy.
  7. Remove the fried kachoris using a slotted spoon and drain excess oil on paper towels.

4. Serving:

  1. Serve Shegaon Kachori hot with green chutney or tamarind chutney.
  2. Enjoy this spicy and flaky lentil-filled snack!

Tips:

  • Ensure the filling is dry; excess moisture can make the kachoris soggy.
