Ingredients:

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1/4 cup milk, lukewarm

  • 2 tablespoons warm milk (for saffron)
  • 1/2 teaspoon baking powder

Instructions:

1. Preparing Saffron Milk:

  1. Soak the saffron strands in 2 tablespoons of warm milk and set it aside to infuse the saffron flavor.

2. Making the Dough:

  1. In a mixing bowl, combine all-purpose flour, sugar, baking powder, a pinch of salt, and cardamom powder.
  2. Add ghee and mix until the mixture resembles coarse crumbs.
  3. Gradually add the lukewarm milk, saffron milk (along with the saffron strands), and yogurt.
  4. Knead the mixture into a soft and smooth dough. You may need to adjust the amount of milk slightly if the dough is too dry.
  5. Cover the dough with a damp cloth and let it rest for 2-3 hours or until it doubles in size.

3. Shaping the Sheermal:

  1. Preheat your oven to 180°C (350°F).
  2. Divide the dough into equal portions and shape them into small balls.
  3. Roll out each ball into a small round or oval-shaped bread, about 1/4 inch thick.
  4. Place the sheermals on a baking sheet lined with parchment paper.

4. Baking:

  1. Brush the tops of the sheermals with a little saffron milk and garnish with slivered almonds and pistachios.
  2. Bake in the preheated oven for about 12-15 minutes or until they turn golden brown and puff up.

5. Serving:

  1. Serve Sheermal warm with your favorite curry, chutney, or as a sweet accompaniment to tea or coffee.
