Ingredients:

For the Dough:

  • 2 cups whole wheat flour (atta)
  • Water, as needed
  • Salt to taste

For the Filling:

  • 1 cup sattu (roasted gram flour)
  • 1 onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1/2 inch ginger, grated
  • A handful of fresh coriander leaves, chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon ajwain seeds (carom seeds)
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Water, as needed
  • Ghee or oil, for cooking

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine whole wheat flour and a pinch of salt.
  2. Gradually add water and knead to make a soft, pliable dough. Cover the dough and let it rest for about 20-30 minutes.

2. Making the Filling:

  1. In a bowl, mix sattu, chopped onions, green chilies, grated ginger, chopped coriander leaves, cumin seeds, ajwain seeds, garam masala, red chili powder, and salt.
  2. Gradually add water and mix to make a stuffing that holds together. The stuffing should be slightly moist but not runny.

3. Rolling and Stuffing the Parathas:

  1. Divide the dough into equal-sized balls and roll them into smooth balls.
  2. Take a dough ball and roll it into a small disc, about 3 inches in diameter.
  3. Place a portion of the sattu mixture in the center of the disc.
  4. Gather the edges of the dough and seal them, enclosing the filling completely.
  5. Flatten the stuffed dough ball and gently roll it out into a paratha, about 6-7 inches in diameter.

4. Cooking the Parathas:

  1. Heat a tawa or flat pan over medium heat.
  2. Place the rolled paratha on the hot tawa. Cook on both sides until golden brown, applying ghee or oil as needed.
  3. Repeat the process for the remaining dough balls and stuffing.

5. Serving:

  1. Serve Sattu Paratha hot with yogurt, pickles, or your favorite side dish.
  2. Enjoy the delicious and nutritious Sattu Paratha!

Tips:

  • Adjust the spice levels by varying the amount of green chilies and red chili powder.
  • You can add finely chopped mint leaves for added flavor.
  • Serve with a dollop of butter or ghee for an extra-rich taste.
