- 1/4 cup sev (crispy chickpea flour noodles)
- Chaat masala to taste
- Red chili powder to taste
- Salt to taste

- Finely chopped onions
- Finely chopped tomatoes
- Fresh coriander leaves, chopped
- Pomegranate seeds
- Mint leaves
Instructions:
1. Making the Kachori Shells:
- In a mixing bowl, combine semolina, all-purpose flour, baking soda, and a little salt.
- Gradually add water and knead to form a stiff dough. Cover the dough and let it rest for 20-30 minutes.
- Divide the dough into small portions and shape them into smooth balls.
- Roll out each ball into a small puri-like shape, making sure it’s not too thin.
- Heat oil in a deep pan over medium heat. Carefully slide in the puris and fry until they puff up and turn golden brown. Remove and drain excess oil on a paper towel.
2. Preparing the Filling:
- In a mixing bowl, combine sprouted moong beans, boiled mashed potatoes, and boiled chickpeas.
- Add chaat masala, red chili powder, and salt to the mixture. Mix well.
3. Assembling the Kachoris:
- Carefully create a hole in the center of each kachori, making sure not to break the shell.
- Stuff each kachori with the prepared filling mixture.
4. Serving:
- Arrange the stuffed kachoris on a serving plate.
- Top each kachori with whisked yogurt, tamarind chutney, green chutney, sweet chutney (if using), sev, chopped onions, chopped tomatoes, pomegranate seeds, and fresh coriander leaves.
