Ingredients:

For the Kachori Shells:

  • 1/2 cup sprouted moong beans
  • 1/2 cup boiled and mashed potatoes
  • 1/2 cup boiled chickpeas
  • 1/2 cup yogurt (whisked)
  • 1/4 cup tamarind chutney
  • 1/4 cup green chutney
  • 1/4 cup sweet chutney (optional)
  • 1/4 cup sev (crispy chickpea flour noodles)
  • Chaat masala to taste
  • Red chili powder to taste
  • Salt to taste

For Garnish:

  • Finely chopped onions
  • Finely chopped tomatoes
  • Fresh coriander leaves, chopped
  • Pomegranate seeds
  • Mint leaves

Instructions:

1. Making the Kachori Shells:

  1. In a mixing bowl, combine semolina, all-purpose flour, baking soda, and a little salt.
  2. Gradually add water and knead to form a stiff dough. Cover the dough and let it rest for 20-30 minutes.
  3. Divide the dough into small portions and shape them into smooth balls.
  4. Roll out each ball into a small puri-like shape, making sure it’s not too thin.
  5. Heat oil in a deep pan over medium heat. Carefully slide in the puris and fry until they puff up and turn golden brown. Remove and drain excess oil on a paper towel.

2. Preparing the Filling:

  1. In a mixing bowl, combine sprouted moong beans, boiled mashed potatoes, and boiled chickpeas.
  2. Add chaat masala, red chili powder, and salt to the mixture. Mix well.

3. Assembling the Kachoris:

  1. Carefully create a hole in the center of each kachori, making sure not to break the shell.
  2. Stuff each kachori with the prepared filling mixture.

4. Serving:

  1. Arrange the stuffed kachoris on a serving plate.
  2. Top each kachori with whisked yogurt, tamarind chutney, green chutney, sweet chutney (if using), sev, chopped onions, chopped tomatoes, pomegranate seeds, and fresh coriander leaves.
  3. Garnish with mint leaves.
  4. Serve Raj Kachori immediately and enjoy this delicious and colorful chaat!
