Ingredients:

  • 1 medium-sized ridge gourd (peeled and chopped)

  • 1/2 teaspoon cumin seeds
  • A small piece of tamarind (about 1/2 teaspoon)
  • Salt to taste
  • Water, as needed
  • For Tempering:
    • 1 tablespoon oil
    • 1/2 teaspoon mustard seeds
    • 1/2 teaspoon urad dal (split black gram)
    • 1-2 dry red chilies, broken
    • A few curry leaves

Instructions:

1. Preparing the Ridge Gourd:

  1. Wash, peel, and chop the ridge gourd into small pieces. Remove any seeds if they are too hard.
  2. Cook the chopped ridge gourd with a little water until it’s soft and tender. Drain the excess water and let it cool.

2. Grinding the Chutney:

  1. In a blender, add the cooked ridge gourd, freshly grated coconut, green chilies, shallots, cumin seeds, tamarind, and salt.
  2. Grind the mixture into a coarse paste. Add a little water if needed to aid in the grinding process.
  3. Transfer the chutney to a serving bowl.

3. Tempering:

  1. In a small pan, heat oil over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add urad dal and sauté until it turns golden brown.
  4. Add dry red chilies and curry leaves. Sauté for a few seconds.
  5. Pour this tempering over the chutney and mix well.

4. Serving:

  1. Serve Peechinga Chamandi as a side dish with steamed rice, dosa, idli, or bread.
  2. Enjoy the spicy and tangy flavors of this ridge gourd chutney!

Tips:

  • Adjust the spiciness of the chutney by varying the number of green chilies.
