Peechinga Chamandi Recipe: A Spicy Ridge Gourd Chutney (Kerala Style)

- 1/2 teaspoon urad dal (split black gram)
- 1-2 dry red chilies, broken
- A few curry leaves
Instructions:
1. Preparing the Ridge Gourd:
- Wash, peel, and chop the ridge gourd into small pieces. Remove any seeds if they are too hard.
- Cook the chopped ridge gourd with a little water until it’s soft and tender. Drain the excess water and let it cool.
2. Grinding the Chutney:
- In a blender, add the cooked ridge gourd, freshly grated coconut, green chilies, shallots, cumin seeds, tamarind, and salt.
- Grind the mixture into a coarse paste. Add a little water if needed to aid in the grinding process.
- Transfer the chutney to a serving bowl.
3. Tempering:
- In a small pan, heat oil over medium heat.
- Add mustard seeds and let them splutter.
- Add urad dal and sauté until it turns golden brown.
- Add dry red chilies and curry leaves. Sauté for a few seconds.
- Pour this tempering over the chutney and mix well.
4. Serving:
- Serve Peechinga Chamandi as a side dish with steamed rice, dosa, idli, or bread.
