Ingredients:

  • 2 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup ghee or oil
  • 1/2 cup lukewarm water
  • For the filling:
  • 250 gm paneer, crumbled
  • 1 large onion, finely chopped
  • 2-3 green chillies, finely chopped
  • 1 tablespoon ginger paste
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala powder
  • Salt, to taste
  • Chopped cilantro, for garnish

Method:

  1. To make the dough, combine the flour, salt, and baking powder in a bowl. Add the ghee or oil and mix until the dough comes together. Gradually add the lukewarm water and knead for 5-7 minutes until smooth. Cover and let it rest for 30 minutes.
  2. Divide the dough into 8-10 equal portions. Roll out each portion into a thin circle, about 3-4 inches in diameter.
  3. In a pan, heat 1 tablespoon of oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds. Add the chopped onion, green chillies, and ginger paste. Cook until the onion is translucent.
  4. Add the crumbled paneer, coriander powder, garam masala powder, and salt. Mix well and cook for 2-3 minutes until the paneer is well coated with the spices.
  5. Place a tablespoon or two of the paneer mixture in the centre of each dough circle. Fold the dough over to form a triangle or a cone shape, and press the edges to seal.
  6. Heat oil in a deep frying pan over medium-high heat. When hot, add the samosas and fry until golden brown, about 3-4 minutes on each side. Drain on paper towels.
  7. Serve hot with a dollop of chutney or a sprinkle of chaat masala.
