Ingredients:
- 1 litre full-fat milk
- 1 cup granulated sugar
- 1/4 cup ghee (clarified butter)
- 1/2 teaspoon cardamom powder
- A pinch of salt
Method:
- In a large, heavy-bottomed pan, combine the milk, sugar, and salt. Place the pan over medium heat and stir until the sugar has dissolved.
- Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the milk has thickened and reduced slightly.
- Add the ghee and cardamom powder to the pan and stir well.
- Continue to simmer for another 5-7 minutes, stirring frequently, until the mixture has thickened to a creamy consistency.
- Remove the pan from the heat and let it cool slightly.
- Pour the Pala Kova into a greased plate or mould and refrigerate until set.
- Once set, cut into desired shapes and serve chilled.
