Pala Kova, a traditional Indian sweet dish, is a delightful treat that originated in the southern state of Andhra Pradesh. Ingredients:

  • 1 litre full-fat milk
  • 1 cup granulated sugar
  • 1/4 cup ghee (clarified butter)
  • 1/2 teaspoon cardamom powder
  • A pinch of salt

Method:

  1. In a large, heavy-bottomed pan, combine the milk, sugar, and salt. Place the pan over medium heat and stir until the sugar has dissolved.
  2. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, stirring occasionally, until the milk has thickened and reduced slightly.
  3. Add the ghee and cardamom powder to the pan and stir well.
  4. Continue to simmer for another 5-7 minutes, stirring frequently, until the mixture has thickened to a creamy consistency.
  5. Remove the pan from the heat and let it cool slightly.
  6. Pour the Pala Kova into a greased plate or mould and refrigerate until set.
  7. Once set, cut into desired shapes and serve chilled.
