Ingredients
- 1 cup gram flour (besan)
- 1 cup jaggery, grated
- 1/2 cup coconut, grated
- 1/4 cup ghee or vegetable oil
- 1/2 teaspoon cardamom powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon salt
- 2 cups all-purpose flour
- 1/2 cup water
- 1 tablespoon ghee or oil for brushing
Method
- To make the filling, heat the ghee or oil in a pan over medium heat. Add the grated jaggery and cook until it melts and forms a syrupy consistency.
- Add the gram flour to the jaggery syrup and cook, stirring continuously, until the mixture turns golden brown and fragrant.
- Remove from heat and mix in the grated coconut and cardamom powder. Let it cool.
- To make the dough, combine the all-purpose flour, turmeric powder, and salt in a bowl. Gradually add the water and knead to form a smooth dough. Cover and let it rest for 10 minutes.
- Divide the dough into 8-10 equal portions. Roll out each portion into a thin circle.
- Place a tablespoon or two of the filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape and press the edges to seal.
- Heat a non-stick pan or griddle over medium heat. Brush the obbattu with a little ghee or oil and cook until both sides are golden brown.
- Repeat with the remaining dough and filling.
