Obattu, also known as Puran Poli in some regions, is a traditional Indian flatbread stuffed with a sweet mixture made from chana dal (split Bengal gram) and coconut. It’s a popular dessert during festivals and special occasions. Here’s how to make Obattu :

Ingredients:

For the Outer Dough:

  • 1 cup whole wheat flour
  • A pinch of salt
  • Water, as needed

For the Sweet Filling:

  • 1 cup chana dal (split Bengal gram)
  • 1 cup grated coconut
  • 1 cup jaggery, grated
  • 1/2 teaspoon cardamom powder

For Cooking:

  • Ghee or oil, for cooking
  • Dry flour for rolling

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine whole wheat flour and a pinch of salt.
  2. Gradually add water and knead to make a soft, pliable dough.
  3. Apply a little ghee on the dough’s surface and cover it. Allow it to rest for about 30-40 minutes.

2. Making the Sweet Filling:

  1. Wash and rinse the chana dal thoroughly.
  2. Pressure cook the dal with enough water until it’s soft and well-cooked. Drain any excess water.
  3. Mash the cooked dal using a masher or blend it into a coarse paste.
  4. In a pan, combine the mashed dal, grated coconut, and jaggery.
  5. Cook this mixture on medium heat, stirring continuously until it thickens and forms a lump-like consistency. Add cardamom powder and mix well.
  6. Allow the mixture (Puran) to cool down completely. Once cooled, divide it into small equal-sized balls.

3. Making the Obattu:

  1. Take a small portion of the dough and flatten it into a small disc using your palms.
  2. Place a ball of the Puran mixture in the center of the disc.
  3. Enclose the Puran mixture completely with the dough and seal the edges.
  4. Gently flatten the dough-filled ball using a rolling pin to form a disc-like shape.

4. Cooking:

  1. Heat a tawa or flat pan and cook the Obattu on both sides with a little ghee until golden brown.

5. Serving:

  1. Serve Obattu hot with ghee on top.
  2. Enjoy this delightful sweet flatbread as a dessert or a special treat during festive occasions.

  • Adjust the sweetness of the filling by varying the amount of jaggery.
