Ingredients:

Instructions:
1. Preparing the Rice:
- Wash the Basmati rice and soak it in water for 30 minutes. Drain and set aside.
2. Making Paneer (Chhena):
- In a large pot, bring 1 liter of milk to a boil.
- Once the milk starts boiling, add the fresh paneer (chhena) and cook for a few minutes until it thickens. Stir continuously to prevent it from sticking to the bottom.
- Remove from heat and let it cool. Once it’s cool enough to handle, knead it to a smooth, crumbly texture. Set aside.
3. Preparing the Pudding:
- In a large, heavy-bottomed pan, bring the remaining 1 liter of milk to a boil.
- Add the soaked Basmati rice to the boiling milk. Stir continuously to prevent sticking. Cook until the rice is soft and the milk thickens.
- Now, add the crumbled paneer (chhena) to the rice and milk mixture. Mix well.
- Add grated Nolen Gur (date palm jaggery) to the pan. Stir and cook until the jaggery melts and the pudding becomes a beautiful caramel color.
- If using saffron strands, add them soaked in warm milk for a lovely golden color and flavor.
- Sprinkle cardamom powder and stir.
4. Garnishing:
- In a small pan, heat a little ghee.
- Fry the chopped nuts until they turn golden brown.

- Garnish with the fried nuts.
- Serve the pudding warm or at room temperature.
