Ingredients:

  • 1/2 cup Basmati rice
  • 2 liters whole milk
  • 200 grams fresh paneer (chhena)
  • 200 grams Nolen Gur (date palm jaggery), grated
  • A pinch of saffron strands, soaked in warm milk (optional)
  • 1/2 teaspoon cardamom powder
  • A handful of chopped nuts (cashews, almonds, pistachios)
  • Ghee (clarified butter) for frying the nuts

Instructions:

1. Preparing the Rice:

  1. Wash the Basmati rice and soak it in water for 30 minutes. Drain and set aside.

2. Making Paneer (Chhena):

  1. In a large pot, bring 1 liter of milk to a boil.
  2. Once the milk starts boiling, add the fresh paneer (chhena) and cook for a few minutes until it thickens. Stir continuously to prevent it from sticking to the bottom.
  3. Remove from heat and let it cool. Once it’s cool enough to handle, knead it to a smooth, crumbly texture. Set aside.

3. Preparing the Pudding:

  1. In a large, heavy-bottomed pan, bring the remaining 1 liter of milk to a boil.
  2. Add the soaked Basmati rice to the boiling milk. Stir continuously to prevent sticking. Cook until the rice is soft and the milk thickens.
  3. Now, add the crumbled paneer (chhena) to the rice and milk mixture. Mix well.
  4. Add grated Nolen Gur (date palm jaggery) to the pan. Stir and cook until the jaggery melts and the pudding becomes a beautiful caramel color.
  5. If using saffron strands, add them soaked in warm milk for a lovely golden color and flavor.
  6. Sprinkle cardamom powder and stir.

4. Garnishing:

  1. In a small pan, heat a little ghee.
  2. Fry the chopped nuts until they turn golden brown.

5. Serving:

  1. Pour the Nolen Gurer Chanar Payesh into serving bowls.
  2. Garnish with the fried nuts.
  3. Serve the pudding warm or at room temperature.

Tips:

  • Be patient while making the paneer; this process can take some time. It’s essential for the right texture.
  • Adjust the sweetness according to your taste by adding more or less Nolen Gur.
