Ingredients:

  • 2 cups fresh drumstick leaves (Murungai Keerai)
  • 1 cup toor dal (split pigeon peas)
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • A pinch of asafoetida (hing)
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Preparing Drumstick Leaves:

  1. Pluck the drumstick leaves from the stems and wash them thoroughly. Set them aside.

2. Cooking Toor Dal:

  1. Cook the toor dal in a pressure cooker until it’s soft and mushy.

3. Making the Gravy:

  1. Heat oil in a pan. Add mustard seeds and let them splutter.
  2. Add cumin seeds and asafoetida. Sauté for a few seconds.
  3. Add chopped onions and sauté until they turn translucent.
  4. Stir in chopped tomatoes and green chilies. Cook until the tomatoes become soft and mushy.
  5. Add turmeric powder, red chili powder, and salt. Mix well.
  6. Cook the gravy for a few minutes until the oil separates from the masala.

4. Adding Drumstick Leaves:

  1. Add the washed drumstick leaves to the gravy and mix well.
  2. Cook for a few minutes until the leaves wilt and become tender.

5. Combining with Toor Dal:

  1. Add the cooked toor dal to the drumstick leaves mixture. Mix well and simmer for a few more minutes.

6. Serving:

  1. Garnish with fresh coriander leaves.
