  • 1 cup red lentils

  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin

  • 2 tablespoons olive oil

Instructions:

1. Sauté Aromatics:

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion, garlic, and ginger. Sauté for a few minutes until fragrant.

2. Add Spices:

  1. Stir in the curry powder, ground cumin, ground coriander, and turmeric. Cook for a couple of minutes to bloom the spices.

3. Add Vegetables:

  1. Add the diced carrots, chopped celery, and apple. Sauté for about 5 minutes until the vegetables begin to soften.

4. Simmer:

  1. Pour in the vegetable broth, red lentils, and diced tomatoes. Season with salt and pepper. Bring the mixture to a boil.

5. Simmer Further:

  1. Reduce the heat, cover, and let the soup simmer for about 20-25 minutes, or until the lentils and vegetables are tender.

6. Blend:

  1. Use an immersion blender to puree the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a blender in batches and blend until smooth.

7. Add Coconut Milk:

  1. Stir in the coconut milk and let the soup simmer for an additional 5 minutes.

8. Serve:

  1. Ladle the Mulligatawny Soup into bowls, garnish with fresh cilantro, and serve with lemon wedges for squeezing.
