Ingredients:

  • 1 cup brown or green lentils
  • 1 cup long-grain white rice
  • 4 cups water
  • 3 large onions, thinly sliced
  • 4 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Method:

1. Rinse the Lentils and Rice:

  1. Wash the lentils and rice separately under cold running water. Drain and set aside.

2. Caramelize the Onions:

  1. In a large skillet, heat 2 tablespoons of olive oil over medium heat.
  2. Add the thinly sliced onions and sauté until they become golden brown and crispy. This may take about 20-30 minutes. Stir occasionally to prevent burning. Once caramelized, remove half of the onions and set them aside for garnish.

3. Cook the Lentils and Rice:

  1. In a large pot, heat the remaining 2 tablespoons of olive oil over medium heat.
  2. Add the rinsed lentils and sauté for a few minutes until they start to become fragrant.
  3. Pour in 4 cups of water and bring it to a boil.
  4. Reduce the heat to low, cover, and simmer for about 15-20 minutes or until the lentils are partially cooked.
  5. Add the rinsed rice to the pot, along with cumin, coriander, cinnamon, salt, and pepper. Stir well.
  6. Cover the pot and continue cooking for an additional 15-20 minutes, or until the rice and lentils are tender and the water is absorbed. If needed, add a little more water and continue cooking until the desired consistency is reached.

4. Assemble and Serve:

  1. Once cooked, fluff the Mujadara with a fork.
  2. Transfer the Mujadara to a serving platter and top with the caramelized onions that were set aside.
  3. Garnish with fresh parsley if desired.
  4. Serve the Mujadara hot as a wholesome and flavorful meal.

Mujadara is a delightful Middle Eastern dish that combines the earthy flavors of lentils and rice with the sweetness of caramelized onions. It’s a comfort food that can be enjoyed as a satisfying main course.
