- 4-5 medium-sized potatoes, boiled and cut into cubes Or use 10-12 of baby potatoes

- 2 tomatoes, pureed
- 1/2 cup cream
- 1/4 cup yogurt
- 1/4 cup cashews, soaked and ground to a smooth paste
- 2-3 green chilies, slit lengthwise
- 1-inch ginger, grated
- 4-5 cloves of garlic, minced
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- A pinch of asafoetida (hing)
- 3-4 tablespoons ghee or oil
- Fresh coriander leaves for garnish
- Salt to taste
Instructions:
1. Preparing the Potato Cubes:
- Boil the potatoes until they are cooked but still firm. Peel and cut them into cubes. If you are using baby potatoes, just peel them, no need to cut into cubes. Set aside.
2. Making the Cashew Paste:
- Soak cashews in warm water for about 15-20 minutes. Drain and grind them to a smooth paste using a little water. Set aside.
3. Preparing the Mughlai Aloo:
- Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until they turn golden brown.
- Add minced garlic, grated ginger, and green chilies. Sauté for a minute.
- Stir in the tomato puree and cook until the oil starts to separate.
- Add turmeric powder, red chili powder, coriander powder, and garam masala. Mix well.
- Add the cashew paste and yogurt. Mix and cook for a few minutes.
- Add the boiled potato and salt. Mix gently to coat the potatoes with the gravy.
- Reduce the heat to low and add cream. Stir well to incorporate.
4. Serving:
- Garnish with fresh coriander leaves.
- Serve Mughlai Aloo hot with naan or rice.
