  • 1 tablespoon tamarind pulp
  • 1 teaspoon jaggery or sugar
  • Fresh coriander leaves, chopped for garnish

Instructions:

1. Preparing the Green Chilies:

  1. Wash the green chilies and slit them lengthwise. Remove the seeds if you prefer a milder spice level.

2. Cooking the Mirchi Ke Tipore:

  1. Heat mustard oil in a pan or kadai over medium heat until it starts to smoke. Allow it to cool slightly.
  2. Reduce the heat to low and add cumin seeds, fenugreek seeds, mustard seeds, and fennel seeds. Sauté for a minute or until they release their aroma.
  3. Add the slit green chilies and sauté them for 3-4 minutes until they begin to soften.
  4. Add turmeric powder, coriander powder, red chili powder, and salt. Mix well to coat the chilies evenly with the spices.
  5. Cook the chilies on low heat for about 10-12 minutes or until they become tender. Stir occasionally to prevent sticking.
  6. Stir in tamarind pulp and jaggery (or sugar). Cook for an additional 2-3 minutes until the flavors meld and the tipore thickens.

3. Garnishing and Serving:

  1. Garnish with freshly chopped coriander leaves.
  2. Serve Mirchi Ke Tipore as a spicy and tangy side dish with Indian bread like roti or paratha or as an accompaniment to rice and dal.
