1. Preparing the Dough:

- Gradually add water and knead to form a smooth and firm dough. Cover it and let it rest for 15-20 minutes.

- Heat oil in a pan. Add cumin seeds and let them splutter.
- Stir in grated ginger and chopped green chilies. Sauté for a minute.

- Carefully gather the edges and seal to form a ball.
- Gently flatten the ball and roll it into a flat disc, around 4-5 inches in diameter.
4. Frying:
- Heat oil in a pan for deep frying over medium heat.
- Carefully slide the flattened kachori into the hot oil.
- Fry until it puffs up and turns golden brown on both sides.
- Remove and drain excess oil on a paper towel.
5. Serving:
- Serve Matar Kachori hot with tamarind chutney, mint chutney, or yogurt.
