Ingredients:

  • 1/2 teaspoon red chili powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon amchur (dry mango) powder
  • 1 tablespoon oil
  • Salt to taste
  • Fresh coriander leaves, chopped

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine all-purpose flour, semolina, ghee, baking soda, and salt.
  2. Gradually add water and knead to form a smooth and firm dough. Cover it and let it rest for 15-20 minutes.

2. Making the Filling:

  1. Heat oil in a pan. Add cumin seeds and let them splutter.
  2. Stir in grated ginger and chopped green chilies. Sauté for a minute.
  3. Add mashed green peas, red chili powder, garam masala, amchur powder, and salt. Mix well and cook for a few minutes.
  4. Add chopped coriander leaves and cook the mixture until it becomes dry. Allow it to cool.

3. Preparing the Kachoris:

  1. Divide the dough into equal-sized portions and roll them into balls.
  2. Roll each ball into a small disc, around 3-4 inches in diameter.
  3. Place a spoonful of the green peas filling in the center.
  4. Carefully gather the edges and seal to form a ball.
  5. Gently flatten the ball and roll it into a flat disc, around 4-5 inches in diameter.

4. Frying:

  1. Heat oil in a pan for deep frying over medium heat.
  2. Carefully slide the flattened kachori into the hot oil.
  3. Fry until it puffs up and turns golden brown on both sides.
  4. Remove and drain excess oil on a paper towel.

5. Serving:

  1. Serve Matar Kachori hot with tamarind chutney, mint chutney, or yogurt.
  2. Enjoy this crispy and flavorful snack!

  • Ensure the oil is hot enough before frying to achieve a crispy outer shell.
