Ingredients:

For the Paratha Dough:

  • 2 cups whole wheat flour (atta)
  • 1 cup grated bottle gourd (lauki)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder
  • 1/4 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 1 tablespoon oil or ghee
  • Water, as needed

For Filling:

  • 1 cup grated bottle gourd (lauki)
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon grated ginger
  • 1-2 green chilies, finely chopped (adjust to taste)
  • A handful of fresh coriander leaves, chopped
  • Salt to taste

For Cooking:

  • Ghee or oil, as needed

Method:

1. Preparing the Paratha Dough:

  1. In a mixing bowl, combine whole wheat flour, grated bottle gourd, cumin seeds, red chili powder, turmeric powder, garam masala, salt, and oil.
  2. Gradually add water and knead the mixture into a smooth and pliable dough.
  3. Cover the dough and let it rest for about 10-15 minutes.

2. Preparing the Filling:

  1. Squeeze out the excess water from the grated bottle gourd. You can save this water for later use in soups or curries.
  2. In a separate bowl, combine the grated bottle gourd, cumin seeds, grated ginger, chopped green chilies, fresh coriander leaves, and salt. Mix well to form the filling.

3. Making the Parathas:

  1. Divide the dough into equal-sized portions and roll them into balls.
  2. Take a dough ball and roll it into a small circle, similar to a chapati.
  3. Place a portion of the prepared filling in the center of the circle.
  4. Fold the edges of the circle to cover the filling and seal it.
  5. Gently flatten the filled dough ball and roll it into a paratha.

4. Cooking the Parathas:

  1. Heat a griddle or tava over medium heat.
  2. Place the rolled paratha on the hot griddle.
  3. Cook until the bottom side has brown spots, then flip and cook the other side.
  4. Apply ghee or oil on both sides while cooking until the paratha is crispy and golden brown.
  5. Repeat the process for the remaining dough and filling.

5. Serving:

  1. Serve the Lauki Parathas hot with yogurt, pickle, or any chutney of your choice.
