Instructions:

1. Preparing the Rice Dough:

  3. Gradually add the rice flour to the boiling water while stirring continuously to avoid lumps.
  4. Reduce the heat and continue stirring until the mixture comes together into a dough-like consistency.
  5. Transfer the dough to a bowl and allow it to cool.

  1. In a pan, combine grated coconut and jaggery.
  2. Cook on medium heat, stirring continuously until the jaggery melts and the mixture thickens.
  3. Add cardamom powder and a pinch of salt. Mix well.
  4. Remove from heat and allow the filling to cool.

3. Shaping the Kozhukattai:

  1. Grease your palms with a little ghee or oil and knead the rice dough to make it smooth.
  2. Take a small portion of the dough and shape it into a small bowl-like shape with your fingers.

  4. Close the edges of the dough and shape it into a modak-like structure, gently pinching the top to resemble a tip.

4. Steaming the Kozhukattai:

  1. Place the shaped Kozhukattai in a steamer or idli stand.
  2. Steam them for about 10-12 minutes until they’re cooked through and firm.

5. Serving:

  1. Serve Kozhukattai hot or at room temperature.

  • For a savory version, you can prepare a filling with grated coconut, mustard seeds, curry leaves, and other spices.
