  • 1-2 green chilies, finely chopped (adjust to taste)
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A pinch of asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon ghee or oil
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon juice for garnish
  • Roasted peanuts for garnish (optional)

Instructions:

1. Preparing the Poha:

  1. Rinse the poha in a colander under running water until it softens. Drain excess water and set aside.
  2. Sprinkle a little water over the poha and let it rest for about 10 minutes to soften further.

2. Preparing the Khichdi Base:

  1. Wash rice and moong dal together. Drain the water.
  2. In a pressure cooker, heat ghee or oil. Add mustard seeds and let them splutter.
  3. Add cumin seeds, chopped green chilies, and asafoetida. Sauté for a minute.
  4. Add chopped onions and sauté until they turn translucent.
  5. Stir in the vegetables, turmeric powder, red chili powder, and salt. Sauté for a few minutes.
  6. Add rice and moong dal. Mix well.
  7. Add about 4-5 cups of water and pressure cook for 2-3 whistles until the khichdi is well cooked.

3. Combining Khichdi with Poha:

  1. Once the pressure is released, open the cooker and mash the khichdi lightly with a ladle.
  2. Add the soaked and softened poha to the khichdi. Mix gently to combine.

4. Serving:

  1. Serve Khichdi Poha hot.
  2. Garnish with fresh coriander leaves, a squeeze of lemon juice, and roasted peanuts (if using).

Tips:

  • Adjust the spiciness by varying the amount of green chilies and red chili powder.
  • You can add other vegetables like potatoes or bell peppers for more flavor and nutrition.
