Ingredients:

  • 1/2 teaspoon garam masala
  • 1/4 teaspoon asafoetida (hing)
  • 1/4 teaspoon turmeric powder
  • 1 tablespoon oil
  • Salt to taste

Instructions:

1. Preparing the Dough:

  1. In a mixing bowl, combine all-purpose flour, ghee, baking soda, and salt.
  2. Gradually add water and knead to form a firm yet pliable dough.
  3. Cover the dough and let it rest for 20-30 minutes.

2. Making the Filling:

  1. Wash and soak moong dal for about 3-4 hours. Drain the water.
  2. Grind the soaked dal coarsely in a food processor without adding any water.
  3. Heat oil in a pan. Add cumin seeds, fennel seeds, and asafoetida.
  4. Stir in the ground moong dal, green chilies, ginger, coriander powder, turmeric powder, garam masala, and salt.
  5. Cook the mixture on medium heat until the dal is cooked and the mixture is dry. Let it cool.

3. Assembling and Frying:

  1. Divide the dough into small balls and roll each ball into a small disc.
  2. Place a portion of the dal mixture in the center of each disc.
  3. Gather the edges of the disc to encase the filling and gently flatten the ball.
  4. Heat oil in a deep pan for deep frying.
  5. Once the oil is hot, reduce the heat to medium and carefully slide in the kachoris.
  6. Fry the kachoris until they turn golden brown and crispy. Fry in batches, if needed.

4. Serving:

  1. Serve Khasta Kachori hot with chutney or tamarind sauce.
