Ingredients:

1 cup glutinous rice1 cup coconut milk
2 ripe mangoes1/2 cup sugar
1/2 cup coconut milk1/2 teaspoon salt

Method:

1. Preparing Sticky Rice:

  1. Rinse the glutinous rice thoroughly under cold water until the water runs clear.
  2. Soak the rice in enough water for at least 2 hours, or preferably overnight.
  3. After soaking, drain the rice and place it in a steamer lined with muslin cloth or a cheesecloth. Steam the rice for about 20-25 minutes until it’s cooked and becomes sticky.
  4. While the rice is still hot, transfer it to a mixing bowl and drizzle 1/2 cup of coconut milk over it. Gently mix the coconut milk with the rice and let it sit to absorb the flavors.

2. Preparing Coconut Sauce:

  1. In a saucepan, combine 1 cup of coconut milk, 1/2 cup of sugar, and 1/2 teaspoon of salt. Heat the mixture over low heat, stirring until the sugar dissolves.
  2. In a small bowl, dissolve 1 tablespoon of rice flour in a little water to make a smooth paste.
  3. Gradually add the rice flour paste to the coconut milk mixture, stirring continuously. Cook until the sauce thickens. Remove it from heat and let it cool.

3. Assembling:

  1. Peel and slice the ripe mangoes.
  2. To serve, mold a small amount of sticky rice into a ball or use a round mold for a neat presentation.
  3. Place the sliced mangoes on the side and drizzle the sweet coconut sauce over the rice and mangoes.
