Ingredients

  • 1 cup split green gram (moong dal)
  • 2 cups water
  • 1 cup jaggery, grated
  • 1 cup coconut milk
  • 1/4 cup ghee or vegetable oil
  • 1/2 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • Chopped nuts or dried fruits for garnish (optional)

Method

  1. Rinse the split green gram (moong dal) and soak it in water for about 30 minutes. Drain the water and cook the dal in 2 cups of fresh water until it is soft and mushy.
  2. In a separate pan, melt the jaggery in a little water over low heat. Strain the jaggery syrup to remove any impurities.
  3. Add the jaggery syrup to the cooked dal and mix well. Cook for another 5-7 minutes, stirring occasionally, until the mixture thickens slightly.
  4. In a small pan, heat the ghee or vegetable oil. Add the ground cardamom, cinnamon, and cloves. Let the spices sizzle for a few seconds until fragrant.
  5. Pour the spice mixture into the dal and jaggery mixture. Stir well to combine.
  6. Add the coconut milk and salt. Mix thoroughly and cook for an additional 2-3 minutes or until the pudding reaches the desired consistency.
  7. Garnish with chopped nuts or dried fruits if desired. Serve warm or chilled.
