Ingredients:
For the Koftas:
- 1 cup raw jackfruit (kathal), grated or finely chopped
- 2-3 boiled potatoes, mashed
- 1/2 cup gram flour (besan)
- 1 small onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 teaspoon ginger-garlic paste
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon red chili powder
- 1/2 teaspoon garam masala
- Salt to taste
- Oil for frying
For the Gravy:
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 1 tablespoon ginger-garlic paste
- 1/2 cup yogurt, beaten
- 1/2 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1/2 teaspoon garam masala
- 2 tablespoons oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Making the Koftas:
- Heat a little oil in a pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Add ginger-garlic paste and green chilies. Sauté for a minute.
- Stir in the grated or chopped jackfruit and sauté for a few minutes.
- Add red chili powder, garam masala, and salt. Cook until the jackfruit is cooked through.
- Remove from heat and let it cool.
- In a mixing bowl, combine the cooked jackfruit mixture, mashed potatoes, gram flour, and salt to make a dough-like consistency.
- Shape the mixture into small balls to make koftas.
- Heat oil in a pan and deep-fry the koftas until golden brown. Drain excess oil and set aside.
2. Preparing the Gravy:
- Heat oil in a separate pan. Add cumin seeds and let them splutter.
- Add chopped onions and sauté until golden brown.
- Stir in ginger-garlic paste and sauté for a minute.
- Add the tomato puree, coriander powder, turmeric powder, red chili powder, and salt. Cook until the oil separates.
- Whisk the yogurt and add it to the gravy. Cook for a few more minutes.
- Add garam masala and adjust salt if needed.
3. Bringing it Together:
- Just before serving, gently place the koftas in the gravy and simmer for a few minutes.
- Garnish with fresh coriander leaves.
4. Serving:
