Ingredients:

  • 2 cups poha (flattened rice flakes)
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/2 cup onions, finely chopped
  • 1/2 cup potatoes, finely chopped
  • 1/4 cup peanuts
  • 8-10 curry leaves
  • 2-3 green chilies, slit
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 1-2 teaspoons lemon juice
  • Fresh coriander leaves for garnish
  • Sev (gram flour vermicelli) for garnish
  • Freshly grated coconut for garnish (optional)

Instructions:

1. Preparing the Poha:

  1. Rinse the poha in a colander under running water until they become soft but not mushy. Drain the water completely and set aside.
  2. Sprinkle a little water over the rinsed poha and gently mix. Allow it to sit for 15-20 minutes to soften.

2. Cooking the Poha:

  1. Heat oil in a pan or kadai over medium heat.
  2. Add mustard seeds and let them splutter.
  3. Add cumin seeds and sauté briefly.
  4. Add peanuts and sauté until they turn golden brown.
  5. Add curry leaves and green chilies. Sauté for a minute.
  6. Add chopped onions and sauté until they turn translucent.
  7. Stir in the chopped potatoes and cook until they’re tender.
  8. Add turmeric powder, red chili powder, and salt. Mix well.
  9. Add the soaked poha to the pan and gently combine all the ingredients. Cook for a few minutes.

3. Garnishing and Serving:

  1. Add lemon juice and mix well.
  2. Garnish with fresh coriander leaves, sev, and grated coconut.
  3. Serve Indori Poha hot with a cup of tea or coffee.
