Indian Spicy Okra Stir Fry with Achari Masala

Ingredients:
- 250 gm okra, cut into 1-inch pieces
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 1 medium tomato, diced
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1 teaspoon garam masala powder
- 1 teaspoon amchur powder
- 1 teaspoon fennel seeds
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chilli powder
- Salt, to taste
- 2 tablespoons mustard oil or vegetable oil
- 2 tablespoons pickle masala (available in Indian stores)
- 2 tablespoons lemon juice
- Chopped fresh coriander, for garnish
Method:
- Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
- Add chopped onions and sauté until they turn light brown.
- Add minced garlic and sauté for another minute.
- Add diced tomato and sauté until they are soft and mushy.
- Add coriander powder, garam masala powder, amchur powder, fennel seeds, turmeric powder, and red chilli powder. Mix well.
- Add okra pieces and sauté for 5-7 minutes or until they are cooked through.
- Add pickle masala, salt, and lemon juice. Mix well.
- Cook for another 2-3 minutes or until the gravy thickens.
- Garnish with chopped fresh coriander and serve hot with rice or roti.
