Achari Bhindi is a popular Indian vegetarian dish that originates from the North Indian cuisine, particularly from the state of Uttar Pradesh. The dish is made with tender okra cooked in a flavourful pickle-inspired gravy, which is a perfect blend of tangy, spicy, and sour flavours. Ingredients:

  • 250 gm okra, cut into 1-inch pieces
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 1 medium tomato, diced
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1 teaspoon garam masala powder
  • 1 teaspoon amchur powder
  • 1 teaspoon fennel seeds
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon red chilli powder
  • Salt, to taste
  • 2 tablespoons mustard oil or vegetable oil
  • 2 tablespoons pickle masala (available in Indian stores)
  • 2 tablespoons lemon juice
  • Chopped fresh coriander, for garnish

Method:

  1. Heat oil in a pan over medium heat. Add cumin seeds and let them sizzle for a few seconds.
  2. Add chopped onions and sauté until they turn light brown.
  3. Add minced garlic and sauté for another minute.
  4. Add diced tomato and sauté until they are soft and mushy.
  5. Add coriander powder, garam masala powder, amchur powder, fennel seeds, turmeric powder, and red chilli powder. Mix well.
  6. Add okra pieces and sauté for 5-7 minutes or until they are cooked through.
  7. Add pickle masala, salt, and lemon juice. Mix well.
  8. Cook for another 2-3 minutes or until the gravy thickens.
  9. Garnish with chopped fresh coriander and serve hot with rice or roti.

My first tasting of Achari Bhindi was at a pre-wedding ceremony of a friend in Lucknow. The flavours were so intense and balanced that it left me wanting more. The addition of pickle masala gives it a unique twist, and I’m sure you’ll love it just as much as I do!
