Instructions:

1. Prepare the Yeast Mixture:

  1. In a small bowl, combine the warm milk and active dry yeast. Let it sit for about 5-10 minutes until it becomes frothy.

2. Mix the Dough:

  1. In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt.
  2. Pour the yeast mixture into the dry ingredients and mix to form a rough dough.
  3. Knead the dough on a floured surface for about 5-7 minutes until it’s smooth and elastic. Shape it into a rectangle and wrap it in plastic wrap. Refrigerate for at least 1 hour.

3. Prepare the Butter Layer:

  1. Place the cold unsalted butter between two sheets of parchment paper. Use a rolling pin to flatten and shape the butter into a rectangle. Refrigerate it for 20-30 minutes until it’s firm.

4. Create the Layers:

  1. Roll out the chilled dough into a larger rectangle on a floured surface.
  2. Place the butter layer in the center of the dough.
  3. Fold the dough over the butter to completely encase it.
  4. Roll out the dough-butter combination into a long rectangle and fold it into thirds, like a letter.
  5. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Repeat this folding process two more times, chilling the dough between folds.

5. Shape the Croissants:

  1. After the final fold, roll out the dough into a large rectangle.
  2. Cut the dough into smaller triangles.
  3. Roll each triangle into a croissant shape, starting from the wider end and rolling towards the tip.

6. Let the Croissants Rise:

  1. Place the shaped croissants on a baking sheet lined with parchment paper.
  2. Cover them with a clean kitchen towel and let them rise at room temperature for about 2-3 hours until they’ve doubled in size.

7. Bake the Croissants:

  1. Preheat your oven to 400°F (200°C).
  2. Brush the croissants with little milk
  3. Bake in the preheated oven for 15-20 minutes, or until the croissants are golden brown and puffed up.

8. Enjoy:

  1. Allow the croissants to cool for a few minutes before serving.
  2. Enjoy your homemade croissants with a cup of coffee or your favorite spread.
