Ingredients:

  • 1 cup millet (bajra or foxtail millet)
  • 2 cups fresh spinach, finely chopped
  • 1 onion, finely chopped
  • 1 tomato, chopped
  • 1/2 cup green peas
  • 2 green chillies, finely chopped
  • 1-inch ginger, grated
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish

Method:

  1. Rinse the millet thoroughly and soak it in water for 30 minutes.
  2. Heat oil in a pan. Add mustard seeds and cumin seeds. Once they splutter, add asafoetida.
  3. Add chopped onions, green chillies, and grated ginger. Sauté until onions turn golden brown.
  4. Add chopped tomatoes and cook until they are soft and oil separates.
  5. Add chopped spinach and green peas. Cook until spinach wilts and peas are tender.
  6. Drain the soaked millet and add it to the pan. Mix well.
  7. Add turmeric powder, garam masala, and salt. Stir to combine all the ingredients.
  8. Pour 2 cups of water into the pan. Cover and cook on low flame until the millet is cooked and the water is absorbed.
  9. Garnish with fresh coriander leaves and serve hot.
