Ingredients:
- 1 cup sabudana (tapioca pearls)
- 1/2 cup peanuts, roasted and coarsely ground

- 1/2 cup fresh coriander leaves, chopped
- 1/2 cup spinach leaves, chopped
- 1/2 cup fenugreek leaves (methi), chopped
- 1 small potato, boiled and diced
- 1 tablespoon ghee or oil
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1 tablespoon lemon juice
- Salt to taste
- Fresh coriander leaves for garnish
- Grated coconut for garnish
Instructions:
1. Preparing Sabudana:
- Rinse the sabudana under running water in a colander until the water runs clear.
- Transfer the rinsed sabudana to a bowl. Add enough water to just cover the sabudana.
- Let it soak for 3-4 hours or until the sabudana becomes soft and non-sticky.
- After soaking, fluff the sabudana gently with a fork to separate the pearls.
2. Preparing the Green Paste:
- In a blender, combine grated coconut, green chilies, fresh coriander leaves, and spinach.
- Blend into a smooth paste without adding water.
3. Making the Khichdi:
- Heat ghee or oil in a pan. Add cumin seeds and let them splutter.
- Add asafoetida, boiled and diced potatoes, and cook for a couple of minutes.
- Stir in the sabudana, ground peanuts, green paste, turmeric powder, and salt. Mix well.
- Cook on low heat, stirring occasionally, until the sabudana becomes translucent and soft.
- Add chopped fenugreek leaves and mix well. Cook for a few more minutes.
- Stir in lemon juice and mix.
4. Serving:
- Serve Hariyali Sago Khichdi hot.
- Garnish with fresh coriander leaves and grated coconut.
