Ingredients:

  • 1 cup basmati rice
  • 1/2 cup moong dal (split yellow lentils)
  • 2-3 cups mixed green vegetables (spinach, fenugreek leaves, green peas, beans, etc.), chopped
  • 1/2 cup coriander leaves, chopped
  • 1/4 cup mint leaves, chopped
  • 1-2 green chilies, chopped (adjust to taste)
  • 1-inch ginger, grated
  • 4-5 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1-2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • Salt to taste
  • Water, as needed
  • Fresh coriander leaves for garnish
  • Lemon wedges for garnish

Instructions:

1. Preparing the Greens Paste:

  1. In a blender, combine coriander leaves, mint leaves, green chilies, and grated ginger. Blend into a smooth paste using a little water. Set aside.

2. Preparing the Khichdi Base:

  1. Wash basmati rice and moong dal together. Drain the water.
  2. In a pressure cooker, heat ghee or oil. Add cumin seeds and mustard seeds. Let them splutter.
  3. Add chopped onions and sauté until they turn translucent.
  4. Stir in the minced garlic and sauté for a minute.
  5. Add the greens paste and sauté for a few minutes until the oil separates.
  6. Add turmeric powder, garam masala, and salt. Mix well.

3. Cooking the Khichdi:

  1. Add rice, moong dal, and mixed vegetables to the pressure cooker. Mix well with the greens mixture.
  2. Pour in about 4-5 cups of water and mix thoroughly.
  3. Pressure cook for 3-4 whistles or until the khichdi is well cooked.

4. Serving:

  1. Once the pressure is released, open the cooker and gently mix the khichdi.
  2. Serve Hariyali Khichdi hot.
  3. Garnish with fresh coriander leaves and serve with lemon wedges.

Tips:

  • Customize the choice of vegetables based on your preference and availability.
  • Adjust the spiciness by varying the amount of green chilies.
  • You can add a dollop of ghee on top before serving for added flavor.
