- 1-2 tablespoons ghee or oil
- 1 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon turmeric powder
- 1 teaspoon garam masala
- Salt to taste
- Water, as needed
- Fresh coriander leaves for garnish
- Lemon wedges for garnish
Instructions:
1. Preparing the Greens Paste:
- In a blender, combine coriander leaves, mint leaves, green chilies, and grated ginger. Blend into a smooth paste using a little water. Set aside.
2. Preparing the Khichdi Base:
- Wash basmati rice and moong dal together. Drain the water.
- In a pressure cooker, heat ghee or oil. Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions and sauté until they turn translucent.
- Stir in the minced garlic and sauté for a minute.
- Add the greens paste and sauté for a few minutes until the oil separates.
- Add turmeric powder, garam masala, and salt. Mix well.
3. Cooking the Khichdi:
- Add rice, moong dal, and mixed vegetables to the pressure cooker. Mix well with the greens mixture.
- Pour in about 4-5 cups of water and mix thoroughly.
- Pressure cook for 3-4 whistles or until the khichdi is well cooked.
4. Serving:
- Once the pressure is released, open the cooker and gently mix the khichdi.
- Serve Hariyali Khichdi hot.
- Garnish with fresh coriander leaves and serve with lemon wedges.
