Ingredients:

For the Dough:

  • 2 cups whole wheat flour (atta)
  • Water, as needed
  • Salt, to taste

For the Filling:

  • 2 cups grated carrots
  • 1 small onion, finely chopped
  • 2-3 green chilies, finely chopped (adjust to taste)
  • 1 teaspoon cumin seeds
  • 1/2 teaspoon red chili powder (adjust to taste)
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon garam masala
  • Salt, to taste
  • Fresh coriander leaves, chopped, for garnish
  • Oil or ghee, for cooking

Method:

For the Dough:

  1. In a mixing bowl, combine whole wheat flour, a pinch of salt, and enough water to form a soft and pliable dough.
  2. Knead the dough for a few minutes until it’s smooth. Cover and let it rest for about 15 minutes.

For the Filling:

  1. In a pan, heat a little oil or ghee. Add cumin seeds and let them splutter.
  2. Add chopped onions and sauté until they turn translucent.
  3. Stir in the grated carrots and green chilies. Cook for a few minutes until the carrots soften and any moisture evaporates.
