Ingredients:

  • 1 cup Samak Rice (Barnyard Millet)
  • 1/2 cup Sabudana (Tapioca Pearls)
  • 1/2 cup Singhara Flour (Water Chestnut Flour)
  • 1/2 cup Curd (Yogurt)
  • 1/4 cup Fresh Coriander Leaves, finely chopped
  • 2-3 Green Chilies, finely chopped (adjust to taste)
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Rock Salt (Sendha Namak)
  • 1/2 teaspoon Baking Soda (optional)
  • 1 tablespoon Oil, for greasing the idli molds

Instructions:

  1. Preparation:
    • Wash the samak rice and sabudana separately in water and soak them in enough water for 4-5 hours, or preferably overnight.
    • Drain the water from sabudana and rice.
  2. Grind the Batter:
    • In a blender, combine the soaked samak rice, soaked sabudana, and singhara flour.
    • Add yogurt, rock salt, cumin seeds, and chopped green chilies.
    • Blend everything into a smooth batter. The consistency should be similar to regular idli batter.
    • If you want softer idlis, you can add 1/2 teaspoon of baking soda and mix well.
  3. Fermentation:
    • Cover the batter and let it ferment for at least 4-5 hours or overnight. The fermentation time may vary depending on the weather.
  4. Grease the Idli Molds:
    • Grease the idli molds with a little oil to prevent sticking.
  5. Steam the Idlis:
    • Just before steaming, add finely chopped fresh coriander leaves to the batter and mix well.
    • Pour spoonfuls of the batter into each mold.
  6. Steam the Idlis:
    • Steam the idlis in a steamer for about 10-15 minutes or until a toothpick inserted into an idli comes out clean.
    • Remove the idlis from the molds and let them cool slightly.
  7. Serve Hot:
    • Serve Farali Idli with peanut chutney or any other fasting-friendly dip or sauce of your choice.
