Ingredients:

  • 1 cup dried chickpeas (or use canned, drained)
  • 1 small onion, roughly chopped
  • 1/4 cup fresh parsley, chopped
  • 2-3 cloves garlic
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and black pepper to taste
  • 1 teaspoon baking powder
  • 4-6 tablespoons all-purpose flour
  • Vegetable oil for frying

Instructions:

1. Soaking the Chickpeas:

  1. If using dried chickpeas, cover them with cold water and allow them to soak overnight. They should double in size. If using canned chickpeas, skip this step.

2. Preparing the Mixture:

  1. Drain and rinse the chickpeas (whether soaked or canned).
  2. In a food processor, combine chickpeas, chopped onion, parsley, garlic, cumin, coriander, cayenne pepper (if using), salt, and black pepper. Process until the mixture is finely ground but not pureed.
  3. Sprinkle in baking powder and 4 tablespoons of flour, then pulse. You want to add enough bulgur or flour so that the dough forms a small ball and no longer sticks to your hands. If it’s too sticky, add more flour.
  4. Transfer the mixture to a bowl, cover with plastic wrap, and refrigerate for at least 1 hour.

3. Forming Falafel:

  1. Use your hands or a falafel scoop to form the mixture into small balls or patties about the size of a walnut. If the mixture is too wet, add more flour as needed.

4. Frying Falafel:

  1. Heat vegetable oil in a frying pan. When the oil is hot (around 350°F or 175°C), carefully add a few falafel at a time.
  2. Cook until they’re browned on all sides, about 3-5 minutes. Don’t overcrowd the pan.
  3. Using a slotted spoon, remove the falafel from the oil and place them on a plate lined with paper towels to drain any excess oil.

5. Serving:

  1. Serve the falafel hot with pita bread, tahini sauce, and your favorite salad ingredients like tomatoes, cucumbers, and lettuce.
  2. Enjoy your homemade crispy and flavorful Falafel!

These Falafel patties are a tasty and versatile dish suitable as an appetizer or a main course. Pair them with pita bread, hummus, and a variety of fresh vegetables for a delicious Middle Eastern meal.
