  • 1 teaspoon garam masala powder
  • Salt, to taste
  • 2 tablespoons mustard paste (optional)
  • 2 tablespoons water
  • Fresh cilantro, for garnish

Method

  1. Heat the oil in a large pan over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
  2. Add the chopped onion and sauté until it turns translucent.
  3. Add the minced garlic and grated ginger and sauté for another minute until fragrant.
  4. Add the coriander powder, turmeric powder, red chili powder, and garam masala powder. Mix well and cook for about 1 minute.
  5. Add the potatoes, cauliflower, and carrots. Mix well to coat the vegetables with the spice mixture.
  6. Add the mustard paste (if using) and water. Season with salt to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pan, and let it simmer for about 20-25 minutes or until the vegetables are tender.
  8. Garnish with fresh cilantro and serve hot with rice or roti.
